Pesto Spinach Fried Eggs

INGREDIENTS

-2 eggs

-1 cup spinach 

-3 Tbsp pesto 

-1 Tbsp butter

-Salt & Pepper

METHOD 

-Heat butter and pesto in a pan on medium heat

-Add spinach and sautée until wilted 

-Make little wells with the spinach, add pesto in the middle then crack in eggs

-Turn heat to med-high and fry egg until cooked, you can move the whites around to fill into the cracks of the spinach 

-Serve with toast
